green chutney day before. You can Bring Papdi from outside or make Papdi at
home as well with Maida(daily flour) and with Aata(Wheat Flour). To Jante hai

Ingredients for Bhalla
1 Cup Urad daal(Dhuli)
½ Cup Moong daal (Dhuli)
6-7 Tbsp water grind karne k liye
½ cup Jeera
1 Pinch of Hing
Salt as required
Oil for frying

Other ingredients for Chaat
3 cups fresh dahi
1/3 Cup Anar (Pomegranate) daane Optional
½ Cup Green Chutney
½ Cup Sweet(Tamarind) Chutney
¼ Cup Boiled Chana(Cheakpeas)
1 Large boiled Aloo(Potato)
Chaat Masala as required
Black peeper Powder
3 cups fresh dahi

For green Chutney
1 Cup Dhania(Coriander) Leaves
2 Hari Mirch(green chilli)
½ inch Adrak(ginger) chopped
½ Cup Lemon juice
1-2 Tbsp water for grinding

For Sweet(Tamarind) Chutney
1 cup Imli(Tamarind) pulp
2 Cups Water
1/3 Cup Jaggery
1 Tbsp Jeera(Cumin)
¼ Tbsp Sauth(Ginger Powder)
¼ Tbsp Lal mirch(red chilli) powder
Kala Namak(Black salt) as required
1 Pinch of Hing
Oil as required
1 cup Imli(Tamarind) pulp
2 Cups Water
1/3 Cup Jaggery
1 Tbsp Jeera(Cumin)
¼ Tbsp Sauth(Ginger Powder)
¼ Tbsp Lal mirch(red chilli) powder
Kala Namak(Black salt) as required

Steps to make Dahi Bhalla
1. Rinse Daal in water a couple of times or soak daal for 4-5 hours.
2. Drain the water and Add daal in Grinder with Adarak, jerra and hing.
3. Grind it and make a thick paste. Add water as mentiond above to grind the daal. Don’t add too much water otherwise Bhalla soak a lot of oil.
4. Pour the batter in a bowl and add salt as required.
5. Stir the Batter 4-5 times so that it become pluffy.
6. You can check the consistency of batter. Take some water in small water and add ½ Tbsp batter. If it start floating then the consistency is right otherwise you can add sooji or rice flour.
7. Heat the kadai or pan with oil for deep frying.
8.Make oil Medium hot and start adding batter into oil with spoon. Add according to Kadai capacity.
9. Turn it to another side so that it fry completely.Fry till it become golden brown.
10. Drain of paper towel. Fry all in the same way.
11. Then add Daal Balls in water for 15-20 mins. Take each Bhalla and flatten in between palm to remove excessive water.

For Tamarind(sweet) chutney
1. In a pan add oil and then add jeera into it.
2. When it start crackle add sauth, hing and add the pulp in the pan.
3. Then add water and jaggery with required salt and let it cook till the mixture become thick.
4. Let the mixture cool and keep it in a air tight container

Serving Dahi Bhalla
1. Take fresh Dahi and beat until it become smooth.
2. Now place Bhalla in Dahi. Put the mixture in bowl and set it into freeze for some time. When chill taste better.
3. Put papdi in plate with 4-5 vada. Add more Dahi if you want.
4.Add some boiled mashed potato and cheakpeas.
5. Add Green chutney and sweet chutney on Bhallas and sprinkle chaat masala, kaali mirch powder and Salt .
6. Garnish it with dhania patta.

2. Now place Bhalla in Dahi. Put the mixture in bowl and set it into freeze for some time. When chill taste better.
3. Put papdi in plate with 4-5 vada. Add more Dahi if you want.

5. Add Green chutney and sweet chutney on Bhallas and sprinkle chaat masala, kaali mirch powder and Salt .
6. Garnish it with dhania patta.
Get ready to eat Tangy, sweet or thoda tikha Dhai bhalla.
