Aloo Paratha
ALOO PARATHA

Aloo Paratha consist of unleavened dough stuffed with a mixture of boiled potato and spices, cooked on hot tawa with butter or ghee. Aloo Paratha is usually served with chutney, butter or pickles in different part of India. Aloo Paratha is extremely easy to make and is great for breakfast or as a snack.

Main Ingredients for Potato Stuffing:

3-4 Medium size Boiled Potatoes
1-2 Green Chilli  Finely Chopped
2-3 Tablespoon Finely Chopped Coriander leaves(Optional)
1-2 Tablespoon Finely Chopped Fresh Mint leaves
1/4 Tablespoon Garam Masala
1/2 Tablespoon Dry Mango Powder or Lemon Juice
1/4 Tablespoon Black pepper powder
1/4 Tablespoon Carrom Seeds
Red Chili Powder (Optional)
Salt as required
Oil or Ghee for roasting Parathas

For Aloo paratha Dough:

2 Cup Whole Wheat Flour
2 Tablespoon Gram Flour
1/2 tablespoon salt or as required
1-2 tablespoon Ghee
Water as required for kneading

Steps for making Aloo Paratha:

1. Boil Potatoes and peel them with a potato mesher, mesh till no lump left behind.
2. Now add all the above ingredients with the spices and mix them very well. Check the taste and add Salt, Chilli and Dry Mango powder according to your taste.
3. In another bowl, take whole wheat flour and Gram Flour.
4. Add Salt, Ghee and Water in the Middle.
5. Bring the mixture together and knead into a dough.
6. Cover and put the dough aside for 15-20 Min.
7 Take medium ball dough and flattern it. Dust some flour and roll into circle. Place the stuffing in the centre.
8. Take the edges and start bringing the pleats in the centre.
9. Sprinkle some flour and roll it to about the same size as that of chapati.
10. On Hot tava, placed the rolled paratha.
11. When the base is partially cooked flip the paratha.
12. Spread some ghee on this side and let the other side cook more.
13. Spread some ghee on the other side too, it will puff up.
14. Flip one to two times more till the both side cooked properly. you can see the crisp brown spot on paratha.
15. Make the remaining in the same way.
16. Serve hot with some extra butter and pickle.

Another way of making Aloo Paratha:

1. You can mix the above Stuffing ingredients in the kneaded dough.
2  By simple rolling the mixed dough you can cook the paratha in the same way as above and serve them with extra butter and pickle.
